Students from the Restaurant Management program and their chef-instructor, Étienne Huot, will take over the Restaurant de l’ITHQ kitchen at lunchtime, from September 2 to October 3.
Before teaching at the ITHQ, Chef Huot was best known as the chef-owner of La Récolte – Espace Local in Rosemont, where he made Québec’s terroir and local sourcing the cornerstone of his approach. For seven years, he showcased the richness of local products, offering small producers a unique platform in harmony with the seasons.
