Research facilities

This laboratory enables users to carry out research protocols in optimal conditions thanks to its equipment, found at the cutting edge of the latest technologies. Its universal system of electrical outlets and its wheel-mounted equipment allow the configuration of its modules to be modified according to the needs of the users. Innovation, culinary exploration, and gesture projects (chefs’ and professionals’ expertise) are carried out here, as well as equipment tests.

The laboratory facilities are suitable for various tests, including experiments with consumer panels to characterize and identify the sensory and organoleptic properties of different products.

The laboratory facilities allow for physicochemical analyses of foods to support various research and educational projects.

The culinary demonstration room features hybrid facilities for a variety of uses, from demonstration and training sessions to lectures and filming.

Located in the ITHQ building, La Relève gourmande teaching restaurant and the Restaurant de l’ITHQ allow researchers to test results obtained in the laboratory in real-life situations (e.g., consumer behaviour studies).

Located in the ITHQ building, the Hôtel de l’ITHQ allows researchers to validate their results in a real-life situation, for example, by conducting a study of consumer behaviour (choice, preferences, willingness to pay, purchasing behaviour, influence of the atmosphere on their satisfaction, etc.).
