Culinary event MTLàTABLE at the Restaurant de l’ITHQ

A 5-course discovery menu at a special price to celebrate the 2024 edition of MTLàTABLE!

On the occasion of MTLàTABLE, a star event on the Montréal gastronomic scene, Chef Jonathan Rassi and his brigade of graduates have created a 5-course tasting menu available for the price of a 4-course menu. A rare experience not to be missed!

1st course
Turnip fondant, beurre blanc with chives, roasted pecans  

 2nd course
Smoked and marinated scallops, buttermilk sauce, grilled corn, apples, dill oil 

 3rd course
Veal tongue capicollo, mustard emulsion, Alfred Le Fermier gougère, cucumber, fermented cabbage 

 Main course
Catch of the day, shellfish and poultry sauce, spelt two ways, zucchini 

 or

 Seared beef, carrot and morel sauce, compressed cabbage with braised oxtail, roasted carrots, sunflower crumble 

 Dessert
Goat cheese cream, poached pears, pear sorbet, oat tuile, caramel, spiced pear jelly

1st course
Radish and chicory marinated in Massawippi miso, hazelnut purée   

 2nd course
Beets, apples, buttermilk, walnuts  

 3rd course
Pasta e fagiolini, green and yellow beans, chanterelles, garlic scape and sage sauce,  

fried bread, mini ruby from Tulsi Farm   

Main course
Leek and lentil terrine, leek green soubise, onions in all their forms
 (confit, pickled pearl, grilled green onion, caramelized onion powder, fried)   

Dessert 
Tartlet, pumpkin seed cream with Quebec Avril amaretto, verbena whipped cream, spiced pears
