Mexican Gastronomy Week

A tribute to one of the world’s richest culinary traditions!

From Tuesday, September 17 to Saturday, September 21, to celebrate Mexican Independence Day, the Restaurant de l’ITHQ invites you to come and celebrate the richness and diversity of Mexican gastronomy.

Generous, vibrant, rooted in both tradition and innovation, this heartfelt cuisine is sure to capture your heart.

The menu has been designed by our colleague Manuel Jaramillo, Sous-Chef at the Restaurant de l’ITHQ. Originally from the city of Toluca, Mexico, Manuel is delighted to share his culinary heritage with you. He will introduce you to the dishes and flavours of his childhood, which he has reinvented with a modern, local touch.

He will be supported by Daniel Hinojosa, Program Coordinator at the ITHQ and a pastry chef by training, and Emmaëlle Guindon-Amyot, Pastry Chef at the Restaurant de l’ITHQ. The food and wine pairings and cocktail creations will be under the signature of Véronique Bénard-Jimenez, Maître d’hôtel at the Restaurant de l’ITHQ.

Amuse-bouche
Omni: Beef tongue taquito
Vegan: Blanc de gris mushroom taquito

1st appetizer
Omni: Aguachile negro with scallops from Îles-de-la-Madeleine
Vegan: Daikon and radish aguachile negro

2nd appetizer
Omni: Beef cheek corunda, atapakua rojo
Vegan: Beluga lentil corunda, atapakua rojo

Main course
Pan-seared halibut, chile poblano salsa, roasted corn, calabacitas & huitlacoche mushrooms
Chile en nogada stuffed with naked oats, apples, and cranberries, walnut and lingonberry salsa

Pre-dessert
Corn cake, goat cheese and strawberry crémeux

Dessert
Brioche, arroz con leche ice cream and quince compote
