Ideal for large receptions, the holiday season package includes a 4-course table d'hôte menu for lunch or dinner, plus festive cocktails and canapés. Add a second main dish for just $5 more per person.

  • Northern shrimp salad, salted herb aïoli, cucumber and sunflower
  • Braised beef korsmeskies, onion sour cream, dill and marinated mustard seeds 
  • Brioche with arugula, bleu d’Élizabeth, roasted hazelnuts 

Choice of 2 appetizers

  • Cured salmon, sour cream with dulse, leeks vinaigrette, radish, fish roe
  • Roasted parsnip soup, parsnip purée, parsnip chips, chervil, camelina oil and tuile
  • Quebec beef carpaccio, Taliah cheese, crispy maple chanterelles, black garlic, mustard greens
  • Epigram of Quebec lamb, curried yogurt, braised red cabbage, Brussels sprout slaw
  • Roasted beet salad, carrot ribbons, sea buckthorn jelly, ricotta, hazelnut and oat crumble
  • Chicken liver mousse, cranberry jelly, marinated cranberries, toasted brioche

  • Roasted duck breast, pan-seared wapsi polenta, butternut squash purée, kale, pumpkin seed crisp, cow parsnip reduction
  • Cerf de Boileau venison short ribs with miso-maple glaze, elderberry jelly, potatoes from Mr. Decelles, oyster mushrooms, chard, wild mushroom sauce
  • Arctic char, lobster bisque, celeriac, cauliflower, crispy seaweed
  • Naked oat risotto with porcini mushrooms, Jerusalem artichokes, sunflower seed tuile, marinated mustard seeds

Dessert
