Support service for nutritional value of menu items improvement  

As part of the Politique bioalimentaire 2018–2025, the government of Québec’s main goal is to support access to and the offering of high-quality, health-promoting food. 

To help achieve this objective, the ITHQ has developed a free, personalized support service to encourage food service businesses to optimize the nutritional quality of the food served to their customers. 

This initiative is made possible thanks to the financial support of the Ministère de l’Agriculture, des Pêcheries et de l’Alimentation (MAPAQ). 

This service will be offered as part of a 2-year pilot project.  

Who may benefit?

Eligible businesses are: 

  • Restaurants and restaurant chains 
  • Private cafeteria food services 

Why is this important for restaurants? 

Because it is a growing customer need. Eating locally and eating healthily has become a major trend in recent years. With an aging population and growing public awareness of climate issues, this trend can only continue to grow. 

For businesses who want to remain competitive, it is essential to think about the quality and provenance of the food they choose to include on their menus. By positioning themselves as banners caring about the health of their customers and the provenance of their products, this shift may even become an important marketing tool.  

People are increasingly concerned about the quality of their food, but that does not mean they want to eat salad at every meal—far from it. They want the food they eat in restaurants to stay tasty and gourmet, as well as be value for their money.   

And that’s exactly the challenge the ITHQ wants to help businesses meet: satisfying customer needs and preserving the pleasure of eating while improving the nutritional value of menu items.

How can the ITHQ help restaurateurs?

The ITHQ provides businesses with a multidisciplinary team that will support them using a 4-step approach. 

Our team

Our team is made up of specialists in cuisine, nutrition, local sourcing, sensory experience, and food science. 

Our process  

ITHQ specialists will work with teams from participating businesses to improve the nutritional value of food offered to customers.  

This collaboration will take place in 4 steps:  

  1. Assessment of food supply improvement needs and identification of foods to be improved 
  2. Co-development and improvement of product offerings, with a view to obtaining versions of good nutritional quality, while promoting local sourcing and maintaining taste quality and competitive prices 
  3. Adaptation of new products to standardize and operationalize them within restaurant chains and cafeterias 
  4. Promotion and showcasing of new foods of good nutritional quality 

What is the expected investment on the company’s side? 

The support service offered by the ITHQ is entirely free of charge. However, for this process to be successful, it must involve internal team members.   

Consequently, businesses wishing to participate will have to make their staff available (e.g., procurement, kitchen, marketing, etc.) for the various phases of product development and menu integration.  

For example, chefs from the participating company could spend a full day at the ITHQ to take part in a recipe co-creation workshop with our team of culinary specialists.
