Presentation

This program will prepare you to become a vegan culinary specialist. It is open to applicants who already have cooking skills and want to adapt their food creations to meet the needs of a growing vegan clientele. The goal is to help you develop the skills and versatility you need to craft fully vegan menus that are delicious, nutritionally balanced, and good for the environment.

This program includes three main components:

  • Knowledge of vegan products and their uses
  • Creation and adaptation of recipes using plant-based alternatives
  • Basic nutrition knowledge

The program also aims to help you develop three qualities in your vegan thinking:

  • Authenticity: Create simple dishes using natural, unprocessed foods.
  • Eco-friendliness: Recognize and adopt ethical, local and seasonal foods.
  • Innovation: Break away from traditional menus and the animal protein paradigm to reinvent cuisine that goes beyond meat replacements.

French is the language of instruction for ITHQ programs, with the exception of WSET® Level 2 Award in Wines and Level 3 Award in Wines (English only), Montréal Tourist Guide and Advanced Studies in International Hotel Management (bilingual: French and English).
