The art of managing a high-end restaurant

In order to last and prosper, restaurants require competent managers who have an entrepreneurial spirit and are able to take full advantage of their restaurant's resources as well as maximize operational profitability.

The ITHQ Signature program Gastronomic Food Service Management will prepare you for managerial positions in high-end restaurants.* Covering topics including operational efficiency and profitability, quality management and food safety, it has two specialization options: cuisine, which explores gourmet and terroir products, and dining room service and wine stewardship. The program is completed by three mandatory internships, including ones done outside of Québec, which give students an opportunity to work in either the kitchen or dining room, in accordance with their specialization. 

The ITHQ has reached agreements with a number of businesses that enable our students to complete hands-on projects as part of their coursework and to quickly apply concepts learned in the classroom.

With its vast selection of sommelier training and quality management courses, Gastronomic Food Service Management offers a unique approach to mastering high-end food service and provides hands-on experience in establishments that offer customers a full gourmet experience at all levels (dining room service, culinary performance, distinctive wine lists, tableware, ambiance, decor, welcome, etc.). Gastronomic Food Service Management opens the door to management careers in a challenging industry where qualified professionals are in very high demand.

*High-end restaurants offer the highest levels of service and cuisine. They include local products in their fare and feature all the hallmarks of gastronomy: fine cuisine, fine wines, attentive service, and a distinctive welcome and setting.
