For a career in high-end food service!

The ITHQ Signature program International Cuisine and Gastronomy is unique in Canada and designed to prepare students for a career in high-end cuisine.* It is a continuous training program that offers two Québec government diplomas, an ITHQ Signature diploma, and extensive professional cooking experience. In the course of your studies, you will discover the many aspects of Québec's culinary culture and local gastronomy of an international calibre, as well as learn to highlight terroir products with an eye to responsible procurement.

Backed by their vast experience, professionalism and talent, ITHQ professors, some of whom will provide tutoring support, will introduce you to all aspects of the profession, from self-management and people skills to culinary terminology, food safety and food science. The program will introduce you to gourmet and terroir products and provide opportunities to visit food producers and welcome guest chefs. You will learn the basics of contemporary cuisine and how to make effective use of fundamental techniques, quickly fit in with new teams, and recognize product freshness and distinctive features at a glance. The ITHQ is the only specialized educational institution in its field to implement a skills-based approach that incorporates advanced knowledge of raw materials, which are categorized in six major culinary groups:

  • Fruits and vegetables
  • Cereals, pulses and rice
  • Eggs and dairy products
  • Meats and ground game
  • Poultry and wildfowl
  • Fish, mollusks and crustaceans

Registration ensures admission to all components of the study program. You will start to acquire hands-on experience from the very start. Since the program is composed primarily of practical workshops and internships, it is ideal for those who learn by doing!

Upon completion of the program, which includes an internship done abroad, you will have acquired several thousand hours of practical experience. This will enable you to work as a chef de partie in high-end restaurants and, after just a few years of rising through the ranks, you will have acquired all the know-how needed to work as an executive chef in the same type of establishment.

This ITHQ Signature program provides an excellent preparation for our Gestion de restaurant (Restaurant Management) program (DVS).
