Again this year, the Restaurant de l’ITHQ is joining the 15 days of food festivities of MTLàTABLE. For the occasion, Professor and Chef Vincent Lavoie-Beaulé has created a three-course menu full of flavour that features delicious Quebec products.

Mackerel marinated in a balsam fir sauce, verbena-scented kohlrabi, miso and black radish
Jerusalem artichoke soup, crushed Jerusalem artichokes in camelina oil, Jerusalem artichoke chips, and chervil
Foie gras mousse with apple brandy, squash madeleine, crispy and pickled apples and tarragon-infused apple sauce
Boileau venison shorthrib contisé with black garlic, pan jus, roasted onion and consommé tart, coffee and onion jelly
Char in saor, wilted Swiss chard leaves and stewed stems, black rice
Ciammotta in crosta: zucchini and pepper confit, burnt eggplant, La Maison Grise crottin cheese, spelt shortcrust and warm einkorn wheat foam
Cranberry cheesecake, beet and raspberry coulis, reconstituted shortbread with white chocolate
Autumn mille-feuille: caramelized puff pastry, spiced pumpkin flan, crémeux with Alto el Sol 65% chocolate, Chantilly cream, Zéphyr caramel 35%
- Customers who reserve for the first seating at 6:00 p.m. are kindly asked to leave their table by 8:00 p.m. Thank you for your cooperation!
- Group reservations can be made for a maximum of 8 people and for the 8:30 p.m. seating only.
- The table d’hôte menus at $31 and $39 and group menus are not available for the MTLàTABLE event.
