
Elvio Galasso's focaccia recipe
So easy, yet so delicious! Elvio Galasso, our professor of Italian cuisine, has been kind enough to share his recipe for homemade focaccia!
Elvio’s focaccia
Ingredients:
- 1 kg flour
- 10 g yeast
- 10 g sugar
- 25 g sea salt
- 125 g olive oil
- 450 ml warm water
- 250 g mashed potatoes
- About 12 cherry tomatoes cut in half
- A few sprigs of fresh or dried rosemary
- Parmigiano-Reggiano or Romano cheese, to taste
Preparation:
- Combine the first 6 ingredients to form a dough
- Let rise for one hour
- Roll out the dough and let rise for another hour
- Top with the mashed potatoes, cherry tomatoes and rosemary
- Bake for 20 minutes at 380oF
- Sprinkle with cheese
- Cut into squares
- Buon appetito!
