Elvio Galasso's focaccia recipe

So easy, yet so delicious! Elvio Galasso, our professor of Italian cuisine, has been kind enough to share his recipe for homemade focaccia!

Elvio’s focaccia

Ingredients:

  • 1 kg flour
  • 10 g yeast
  • 10 g sugar
  • 25 g sea salt
  • 125 g olive oil 
  • 450 ml warm water
  • 250 g mashed potatoes
  • About 12 cherry tomatoes cut in half
  • A few sprigs of fresh or dried rosemary
  • Parmigiano-Reggiano or Romano cheese, to taste

Preparation: 

  • Combine the first 6 ingredients to form a dough
  • Let rise for one hour
  • Roll out the dough and let rise for another hour
  • Top with the mashed potatoes, cherry tomatoes and rosemary
  • Bake for 20 minutes at 380oF
  • Sprinkle with cheese
  • Cut into squares
  • Buon appetito!
