Ideal for large receptions, the holiday season package includes a 4-course table d'hôte menu for lunch or dinner, plus festive cocktails and canapés. Add a second main dish for just $5 more per person.

  • Half-bottle of wine/person (sommelier’s choice)
  • Coffee, tea and herbal tea 

3 canapés/person

  • Northern shrimp salad, salted herb aïoli, cucumber and sunflower
  • Braised beef korsmeskies, onion sour cream, dill and marinated mustard seeds 
  • Brioche with arugula, bleu d’Élizabeth, roasted hazelnuts 

Choice of 2 appetizers

  • Butternut squash soup, speck, and pumpkin seeds
  • Roasted beet salad, beet chips, blue honeysuckle jelly, watercress, smoked pecans and mascarpone
  • Labrador-tea-marinated salmon, Nantes carrot ribbon, sea buckthorn and radish
  • Quebec beef tataki, black garlic puree, crusty bread, honey mushrooms marinated in soy and maple
  • Chicken liver mousse, cranberry jelly, marinated cranberries, toasted brioche
  • Epigram of Quebec lamb, curry yogurt, braised red cabbage and Brussels sprout salad

  • Guinea fowl breast, Jerusalem artichoke puree, potatoes, shitake mushrooms and beurre noisette sauce
  • Venison leg, red beet soubise sauce, roasted beets, king oyster mushrooms, Tuscan cabbage, and rich sweet gale sauce 
  • Arctic char, butternut squash puree, roasted carrots, pumpkin-seed Grenobloise
  • Naked oat risotto, roasted root vegetables, oyster mushrooms, sunflower oil and seeds


  • Baked Alaska (ice cream centre with caramel apple and maple on sponge toffee, covered with meringue)
