Description

Restaurateurs and culinary enthusiasts will enjoy learning the secrets of making and serving pizza from an award-winning Italian Master Pizza Maker from The School of Italian Pizza in Toronto, which is the only school in Canada dedicated to teaching the unique art of pizza making. Conducted in ITHQ’s state-of-the-art facility, this hands-on course is designated for all levels of learning and provides practical skills to make anyone an accomplished pizza maker.

Formula

2 days, from 1:30 pm to 5 pm, including all materials for the course.

Goals

This two-day course provides the perfect mix of old traditions with new technologies as well as theoretical knowledge on equipment choice and layout productivity.

Content

Learn practical techniques including how to:

  • Make the perfect traditional pizza dough;
  • Divide and round individual pizza dough;
  • Stretch the pizza dough using a variety of techniques;
  • Top the pizza with traditional, new and trendy toppings;
  • Use and maintain both wood burning and electric ovens.

Gain theoretical knowledge on:

  • Choosing the flour, distinguishing between 0, 00 and whole wheat flour;
  • The importance of rising, fermentation and how they affect the health properties and flavour of the dough;
  • How temperature affects the dough.
